Chuck’s Lentil Salad

The secret to a great salad: fresh ingredients. Here’s a quick and delicious lentil salad using Olive Oil, Apple Cider Vinegar and Maple Syrup.

INGREDIENTS
1/4 cup of lentils
Chopped carrots and celery (as much as you like)
1 tbsp of red onion
1 tsp of mustard seed
1 tbsp of Dijon mustard
1 tbsp of finely chopped chives
Pepper to taste
2 tbsp Extra Virgin Olive Oil
1 tbsp of Premium Apple Cider Vinegar
1 tbsp of Maple Syrup
3 roasted peppers
3 sliced radishes
1 bunch of pea shoots

INSTRUCTIONS
- In a bowl, combine lentils, carrots, celery, red onion, mustard seeds, Dijon mustard, chives, Olive Oil, Apple Cider and Maple Syrup. Season to taste.
- Plate a couple of roasted peppers
- Top with lentil salad
- Garnish with sliced radishes and pea shoots
