Maple Olive Oil Walnut Granola

 

INGREDIENTS

3 C Old-Fashion Oats
1 C walnuts, chopped (or Pistachios)
1 C Pepitas (pumpkin seeds)
1 C Coconut Chips
3/4 C Dried Cherries
1/2 C Chuck’s Olive Oil
1/2 C Chuck’s maple syrup
2 Tbsp raw honey
1/4 tsp Coarse Salt

INSTRUCTIONS

  1. Preheat oven to 300 degrees and line a baking sheet with parchment or a silicon mat.
  2. In a large bowl, stir together all the ingredients until all the oats are coated
  3. Spread the oats out on the prepared baking sheet and smooth out until you have an even layer
  4. Bake the granola at 300 degrees for 25 minutes. The oats will not be crispy yet but will crisp up as they cool.
  5. Cool the granola completely on the baking sheet. Once cooled, break the granola up into pieces. Store in an air-tight container up to 3 weeks
