Sun-dried Tomato Pesto

INGREDIENTS
2 cups fresh basil
1 jar CH sundried tomatoes
2 cups cashews, toasted
1 cup grated parmesan cheese
3 lemons zested and juice from 1 lemon
2 tsp salt
1 tsp pepper
¾ cup Chuck Hughes olive oil

INSTRUCTIONS

1. Combine everything in a food processor and blitz until mostly smooth.
2. Use it as sauce for pasta, spread on bread for sandwich, or add some vinegar to make a quick vinaigrette.
