Roasted Cauliflower

Roasted Cauliflower



1 head Cauliflower, cut into fleurets
¼ cup Sultana Raisins
¼ cup Pine Nuts, toasted
¼ cup chopped Parsley
3 tbsp Chuck Hughes Olive Oil
3 tbsp Chuck Hughes White Balsamic


  1. In frying pan on medium heat, toast pine nuts until golden brown
  2. Soak sultana raisins in white balsamic for at least 20 minutes then strain
  3. Turn oven to 450F
  4. Toss cauliflower fleurets in olive oil and roast for 15 – 20 minutes
  5. Plate cauliflower and cover with raisins, pine nuts, and parsley
  6. Drizzle with a little more olive oil and white balsamic
