Roasted Cauliflower
INGREDIENTS
1 head Cauliflower, cut into fleurets
¼ cup Sultana Raisins
¼ cup Pine Nuts, toasted
¼ cup chopped Parsley
3 tbsp Chuck Hughes Olive Oil
3 tbsp Chuck Hughes White Balsamic
¼ cup Sultana Raisins

INSTRUCTIONS
- In frying pan on medium heat, toast pine nuts until golden brown
- Soak sultana raisins in white balsamic for at least 20 minutes then strain
- Turn oven to 450F
- Toss cauliflower fleurets in olive oil and roast for 15 – 20 minutes
- Plate cauliflower and cover with raisins, pine nuts, and parsley
- Drizzle with a little more olive oil and white balsamic
