Maple Ice Cream
INSTRUCTIONS
▪️1-1/2 cups 3.25% milk
▪️2 tbsp sugar
▪️1-1/2 cups 35% cream
▪️5 large egg yolks
▪️3/4 cups maple syrup
▪️1/8 tsp kosher salt
▪️1/4 tsp pure vanilla extract

💥1. Warm the milk and sugar in a sauce pot
💥2. Put the cream in a large bowl with a strainer on top.
💥3. In a separate bowl, mix the egg yolks.
💥4. Slowly pour the warm milk over the egg yolks, whisking constantly, then pour the mixture back into the sauce pot.
💥5. Stir the mixture constantly over medium low heat until it thickens and coats the back of a spoon.
💥6. Pour the thickened milk through the strainer into the cream.
💥7. Add the maple syrup, salt, and vanilla and stir to combine.
💥8. Chill mixture in fridge then churn in your ice cream machine to manufacturers specifications.
