Cod with Pepper Spread Butter Sauce
INGREDIENTS
6 tbsp butter melted
2 portions cod
1 onion, finely chopped
1 leek, thinly sliced in rounds
Chuck Hughes Olive Oil
Chuck Hughes Hot Pepper Spread
1 tbsp lemon juice
Salted butter
Salt and pepper

INSTRUCTIONS
- In a medium sized pot, heat olive oil and cook leek and onion on low heat, about 10 minutes, until translucent. Salt and add 1 tbsp butter. Reserve.
- Season cod, sear in a hot pan at medium heat until golden (4-5 minutes)
- Remove from heat, flip and add lemon juice; let sit for 2 minutes; reserve
- Return pan to medium heat, add 2 tbsp Pepper Spread, 5 tbsp butter and stir 1 minute
- Remove from heat and keep stirring until smooth and creamy
- Place onions and leeks in a serving plate and top with cod, golden side up
- Spoon over Pepper Spread butter sauce
