Chicken Parm Sandwich



2 chicken breast, pounded flat
1 egg
2 tbsp buttermilk (regular milk is fine)
½ cup flour
1 cup breadcrumbs
Chuck Hughes Pepper Spread
½ cup shredded mozzarella
¼ cup shredded parmesan


    1. Mix together the egg and buttermilk.
    2. Season the chicken breast.
    3. Coat breast with flour, then dunk into egg mix, then coat with breadcrumbs.
    4. Fry chicken in 350 degree oil until cooked through.
    5. Top fried chicken with Chuck Hughes Pepper Spread, mozzarella, and parmesan and broil until cheese is melted.
    6. Toast focaccia then assemble the sandwich.
