Boar Bolognese

Boar Bolognese



▪️2 lbs ground boar meat
▪️2 medium onions, small dice
▪️2 tbsp fresh garlic, minced
▪️3 cans tomato paste (369 ml/can)
▪️1 jar Chuck Hughes pepper spread OR sundried tomato, strained of oil
▪️3-1/2 L water
▪️3 bay leaves
▪️2 stems fresh basil
▪️1 tbsp kosher salt
▪️1 tsp pepper

🔸1. Season ground boar and sear in a large pot until some of the meat starts to brown then remove meat from pot.
🔸2. Add onions to pot and coo about 5 minutes on medium heat scrapping the bottom of the pot to get the good brown bits off.
🔸3. Add garlic and cook another minute.
🔸4. Add tomato paste and cook for 2 minutes stirring constantly.
🔸5. Add pepper spread OR sundried tomatoes, water, bay leaves, basil leaves, salt, and pepper.
🔸6. Bring to boil then turn down to low simmer and cook 3-4 hours until sauce is slightly reduced and thickened.
