Blueberry Buckwheat Waffles
INGREDIENTS
2 cups buckwheat flour
4 tsp baking soda
1 tbsp sugar
½ tsp salt
2 eggs, separated
⅓ cup butter, melted and cooled to room temp
1 ¾ cup milk
½ tsp vanilla extract
1 cup fresh wild blueberries

INSTRUCTIONS
-
1. Mix everything together except for the egg whites and blueberries.
2. Beat the egg whites to a soft peak.
3. Add blueberries to mixed batter and fold in.
4. Gently fold in egg whites.
5. Cook batter in a waffle maker according to the manufacturer’s instructions.
6. Serve with butter and Chuck Hughes Maple Syrup.
