Baked Feta



200g feta cheese
1 pint cherry tomatoes
4 tbsp Chuck Hughes Eggplant
2 tbsp fresh basil, chopped
1 tbsp fresh oregano, chopped


    1. Place feta in a baking dish.
    2. Add tomatoes all around and drizzle with a bit of olive oil.
    3. Bake at 400 degrees for 25 minutes.
    4. Remove from the oven and add eggplant, basil, and oregano and gently mix with tomatoes.
    5. Return to the oven and bake for another 10-15 minutes.
    6. Cool slightly and serve warm.
