INGREDIENTS
- 2 bunch asparagus (½ bunch reserved)
- ½ jar Chuck Hughes Pepper Spread
- 1 lemon, zest and juice
- 2 tbsp fresh parsley, chopped
- 1 tsp garlic, chopped
STEPS
- 1. Take 1 bunch and a half of asparagus and toss with olive oil, salt, and pepper.
- Take ½ bunch asparagus and slice into ¼” thick rounds.
- In a bowl, combine asparagus rounds and remaining ingredients and mix well. Season with salt and pepper.
- Grill whole asparagus.
- Plate and top with pepper spread dressing.
