Cucumber and Shrimp Salad

INGREDIENTS

  • 1 Shallot
  • 1 tsp Salt
  • .5 tsp Pepper
  • 1 tbsp Olive Oil
  • 1 tbsp White Balsamic Vinegar
  • 5 Lebanese Cucumbers
  • 2 tbsp Fresh Dill, rough chopped
  • 150 g Matane Shrimp (or baby shrimp)

STEPS

  1. Slice shallot into thin rounds and place in a bowl.
  2. Add salt, pepper, olive oil, and white balsamic and toss everything together then let sit 5 minutes.
  3. Cut cucumbers into 1/4 inch rounds and add to shallots with the dill and toss everything together.
  4. Plate cucumbers and top with Matane shrimp and some more fresh dill sprigs.
