INGREDIENTS
- 1 Shallot
- 1 tsp Salt
- .5 tsp Pepper
- 1 tbsp Olive Oil
- 1 tbsp White Balsamic Vinegar
- 5 Lebanese Cucumbers
- 2 tbsp Fresh Dill, rough chopped
- 150 g Matane Shrimp (or baby shrimp)
STEPS
- Slice shallot into thin rounds and place in a bowl.
- Add salt, pepper, olive oil, and white balsamic and toss everything together then let sit 5 minutes.
- Cut cucumbers into 1/4 inch rounds and add to shallots with the dill and toss everything together.
- Plate cucumbers and top with Matane shrimp and some more fresh dill sprigs.
