Grilled Asparagus


 

INGREDIENTS

2 bunch asparagus (½ bunch reserved)
½ jar Chuck Hughes Pepper Spread
1 lemon, zest and juice
2 tbsp fresh parsley, chopped
1 tsp garlic, chopped

INSTRUCTIONS

    1. Take 1 bunch and a half of asparagus and toss with olive oil, salt, and pepper.
    2. Take ½ bunch asparagus and slice into ¼” thick rounds.
    3. In a bowl, combine asparagus rounds and remaining ingredients and mix well. Season with salt and pepper.
    4. Grill whole asparagus.
    5. Plate and top with pepper spread dressing.
