Meatloaf

 

INGREDIENTS

Loaf
1 small onion, diced
2 cloves garlic, minced
2 lbs lean ground beef
2 eggs
3 tbsp CH cocktail sauce
3 tbsp fresh parsley, chopped
⅔ cups panko breadcrumbs

Topping
¼ cup Chuck Hughes cocktail sauce
1 tbsp molasses
3 tbsp brown sugar
1 tbsp worcestershire sauce

INSTRUCTIONS

    1. In a small pan, cook onions and garlic just until translucent.
    2. In a large bowl, mix together the onions, garlic, ground beef, eggs, cocktail sauce, parsley, and breadcrumbs.
    3. In a greased loaf pan, pack in the meat mixture.
    4. Bake at 350 for 35-40 minutes.
    5. While loaf is baking, mix together the topping. Combine the cocktail sauce, molasses, brown sugar, and worcestershire and mix well.
    6. Remove meatloaf after 40 minutes and top the loaf with the topping. Return to the oven and bake for another 10-15 minutes.

    Serve with Cocktail Sauce
