Maple and Apple Cider Vinegar Beans

 

INSTRUCTIONS

🔸500 g navy beans
🔸500 g bacon, cut into small chunks
🔸250 g salt pork, cut into small chunks
🔸1 medium onion, tough chop
🔸1 tbsp garlic, chopped
🔸1/3 cup brown sugar
🔸1/4 molases
🔸1/4 cup maple syrup
🔸1.5 tbsp kosher salt
🔸1 tsp pepper
🔸3 L water
🔸3 tbsp Apple Cider Vinegar

▪️1. Soak beans overnight. Place beans in large bowl and cover with enough water to allow beans to double in size.
▪️2. In a large dutch oven, add bacon and salt pork and cook over medium heat to render out fat.
▪️3. Once the bacon begins to brown, remove about half the fat then add onions and cook for 3-4 minutes then add garlic and cook another minute.
▪️4. Add brown sugar, molases, maple syrup, salt, pepper, and water.
▪️5. Bring to boil then turn down do low simmer and cover and cook 3-4 hours till beans are tender and everything has thickened up.
▪️6. Add apple cider vinegar and remove from heat.
